If you were only allowed one recipe book, which one would you choose?

I'm planning to get a little more adventurous in my cooking, as long as it doesn't cost too much, and thus would like to add a book to my recipe book collection. I currently have a few NZ books, Nigella's Kitchen and various cheap everything books, not to mention some delightful chocolate and dessert recipe books. I also have The Essential Beaton, although that's more for the novelty value than for the recipes.
What's your favourite recipe book and why?

The measurements aren't so much of a problem, it turns out. We use cups &c in NZ.
