It's sort of half-explained by saying he had always been lucky, and the phrase "The Dark One's Own Luck" after his Shadar Logoth infection... but that doesn't really explain anything. It's not like Padan Fain has ever shown us that kind of luck (although Slayer or one of the Forsaken does sort of grumble that he's incredibly hard to kill, and very lucky, or something)
I mean, Rand's Superpowers are mostly explained (other than the mysticism at the end of tEotW and tGH). Perrin's are as well- his Wolfbrother-ness was set off by actually meeting wolves.

Well, it's been made quite clear that Shadar Logoth's evil is most definitely not the same as the DO's evil. So that's out.
My guess is that Mat's luck was just dormant and what set it off was his healing. Of course, I don't know how but that would be my best guess.
