I agree with you that some of his word choices were a bit off (though part of me thinks that BS was test writing Mat in this book LOOKING for just this sort of fan feedback-he IS hard to write... I imagine), but that some other inconsistencies can be explaned situationally.
Mat has been under extreme stress for much of the series, and was for part of the latest book, but his situation is also changed somewhat. He is married...and is now a PRINCE! I suspect that denial is creeping in, which would exagerate some of his personality traits, and possibly make him seem slightly less mature than before, a sort of reverting to the personality he displayed at the series outset.
I think his subconcious is sorting out his new role, and that his slightly 'off' characterization is merely his mind trying to protect itself.
