Maybe Mat giving up an eye relates to a play on the eyes of a dice (rolling two ones - a winning or losing throw depending on the game).
Perhaps he dices against the Finn, and in order to beat their throw, he needs to destroy one of the dice to get a single 1, thereby destroying one of his "eyes"
