Here's my analogy, and why I can't believe no one noticed that saidin was cleaned.

If you've been drinking swamp water your whole life and someone hands you a bottle of crystal clear, ice cold water your going to notice what's different, right? It's clean.

If you drank swamp water all your life, then someone handed you a glass of fresh water, it would taste different. But if you couldn't see the water for some reason, you wouldn't be able to pin point why it tasted different. The Ashaman can't see Saidin, so they couldn't look and tell if it was different. All they have to go one is how it "feels" to them. They are accustomed to it always having the taint. So it would feel different when it is suddenly clean to them.

Now if your drinking Coke, and someone slips in a Pepsi that's different, but you can't really explain what's different.

You would be able to tell the new sot drink is sweeter and doesn't taste nearly as good.
I was just trying to think what Sanderson meant by his statement, and that's the best I came up with...

Eh, there is probably something else that is missing and haven't been picked up.
