I tend to focus my re-reads on one or two characters, and I never notice any damage to the story. Mainly because it seems that there is more meaningful drama inherent in some storylines versus others. That's the benefit of having such a large cast. I think removing the minor character POVs can be done with no impact on the story whatsoever - those mainly functioned as infodump-via-character-thought-patterns, anyway.

I think it would be cool if someone developed a tool that cataloged the order of POVs by book & whether any noteworthy event happened in that chapter, so you could filter based on whose POVs you wanted to read in order.
