They most likely used the One Power to boost plant production & growth, establish Keepings to preserve the food in large quantities and the more scientific minded probably researched using the One Power to create new varieties of foods that would feed more people.
Keepings, if they really halt all chemical, physical and biological processes, must've been extremely useful.
Perhaps Aginor turned to the Shadow because he was so bored with his job - trying to crete a cow with better yield, for example. After all, crossbreeding to create the Trollocs was his triumph.
They also had that Singing thing for making great crops.
