Many of the relationships in WoT have no build-up, are ridiculously one-sided, and would be completely unworkable in real life. Take Rand and his ladies, for example. The only one who got even a bit of foreshadowing was Elayne, and that was limited to one single week of kissing in corners. Most people here in our world wouldn't even call that a relationship in their freshman year of highschool. Then after that single week, they separated for nearly a year, and the very next time they saw each other they got married. Right. The other ladies didn't even get that much foreshadowing; Min was treated like a stranger and Aviendha as an enemy, until both said "oh btw let's get married." Avi has some standing of her own and doesn't necessarily need Rand for social status, but Min is basically riding his coat tails. Similar to how Gawyn has limited standing on his own (he's the first prince of the sword, but that's basically a glorified general, whose role Birgitte has filled, and Elayne is getting on just fine without him); his attachment to Egwene, and more generally to the Tower, is the only thing that actually makes him matter.
I think you're shorting both Avi and Min here. Rand and Avi had, by WoT standards, a long courtship and period of growth together. They covered nearly all aspects of a relationship before a moment of intensity (the far snows) finally cemented their feelings. Even after that, it took still more time for anything close to normalcy to develop, and yet still at the end of ToM the relationship continues to evolve.
As for Min, you also find a long courtship (again by WoT standards) and it took Min a long time to bring Rand around. For much of their early relationship, Min was just a "little sister" to Rand. She had to work pretty hard to win him over. And from her perspective, you have to keep in mind her viewings and the fact that she new from the very beginning that she would fall in love with him. A weird thing to grasp, but it was right in front of her from the start. Rand took a long time to develop and come to terms with his feelings for her, largely through her own actions.
I think both of these relationships had the most build-up of any in WoT.
I would slave, to pave the way, to sink your ship of fools.
