But, yes, I think there are very few instances where dexterity is used head to head because an attack with the One Power is often lethal. Most channelers flee or change the terms of the battlefield rather than hold their ground rather than risk certain death if they failed.
I would say the major instances of this would be Elayne's comment about the Windfinders being able to handle much larger ropes of Air more deftly despite being weaker and less skilled, Rands' manipulation of the Shield at Dumai Wells and then Egwene's creation of the multi-colored balls with variations on size and activity.
