The pilot isn't really the best example of the show, but I also don't really want to show them the series completely out of order.

I agree that it isn't the best episode (it is quite flabby and probably could have been reduced to a single episode) but seeing it out of order will just mess up the character introductions and lessen their impact.
The Train Job is just a bad episode that was written in a rush with much studio interference, it's best ignored on the first watching of the series. It actually spends quite a bit of time repeating certain points from the pilot. The only really important point from the episode is that Mal backs out of a deal with Niska.
For me personally it took until Safe to fully hook me on the show. I'd just advise the person to start with the pilot, skip the Train Job and give it until Safe to see if they like it.
