The only part of epic fantasy that remains really difficult is portraying magic in a realistic, non-stupid-looking way. It takes a lot of animation / cgi, and, consequently, a large budget. Shannara, though, doesn't have a lot of magic. 90% of Shannaran magic consists of brief bursts of druid fire, and magical fire just isn't that hard to do.
If you think about it, Shannara is a series consisting of long quests, and a few big battles. Which is pretty much exactly what the Lord of the Rings movies consisted of, and (in my opinion) they were fantastic. Shannara seems quite suited to film adaptation if you ask me.
