Because with all that unrelenting grim action there's nothing to add a touch of levity.
I liked Casino Royale the first time I watched it, but it didn't stand up under second viewing. The others won't get a second viewing because they just weren't good enough. I love rewatching the old Bond films.
And you're right. There are so many plot holes and so many things that just don't make sense.
Waste of a good franchise.
I have seen every Bond up until Quantum of Solace and I have yet to rewatch a single Craig movie. I've seen some of the older ones at least ten times. Maybe the previous films did glamorise a violent profession, but I love how all the previous Bonds could throw in a dreadfully weak joke as they were facing imminent execution. Craig's movies have most of the old elements but the fact that they don't allow you to smile for two hours and he's almost as dislikeable as the villains, makes for very serious and probably regrettable viewing.
They clearly shifted the posts back to making Bond more serious, but I'm not ashamed to admit I miss the exploding milk bottles and dart-shooting wrist watches from years ago.
