My only fear is that you'd watch them and go, "Who the hell are these guys...what is going on?"
There's almost no time for any set-up of characters. They're just there, and there name may only be mentioned once. To me, if I hadn't read the book, I'd be lost. That would detract from the enjoyment I have of the show, as I tried to figure who people are.
That said, I think that it could be relatively easy for someone to jump into the series via the episodes because of the production value and the epic feel to it all. You see two totally different storylines that aren't entirely connected (yet) but they are both interesting in their own way.
Yes, the production is very good. Enough that if you haven't read the books, it's still very enjoyable. But having read the books gives one a significantly different perspective.
I can't tell you what's better to do. I would suggest reading them but if you're gonna wait, it's gonna be a long wait before you sit down to watch the episodes.
I also suggest reading them first.

If you're going to read it, the book should be first, but you don't need to to enjoy the show.
