I know they didn't bother showing him on the ride north to the wall, but I'm almost certain that Ghost appears in a wide-shot either as they approach the Wall, or just after they got to the wall. I can't recall specifically off-hand, but I remember thinking "where's ghost?" when they initially rode for the Wall, only to see him later and go "ahh, ok". I'm going to watch tonight to make sure.
Agreed. As they have to remove so much story to make the TV show, they have to find ways to set-up future scenes. It's hard to judge how well they are doing knowing the full story from the books, but it seems that they are giving the non-readers ample justification to view Jaime in a bad light and lead to a more powerful emotional response to later scenes.
It's true that Ghost doesn't do much at this point in the story, but it would still be nice to remind people that he's there. As it stands right now, the brand new viewer saw Jon pull up the runt, get laughed at and told that one's his, then we haven't seen it again for three episodes. When Ghost finally does show up, it will be kind of out of nowhere if they don't establish him.

I think that making Jaime and Ned more antogonistic toward each other will make the future scene where Jaime orders the death of Ned's entire guard more cutting, and will establish Jaime as a higher level villain in the minds of the viewers before he's captured by Robb and before we get to see his side of things in the third season (hopefully).

I would slave, to pave the way, to sink your ship of fools.

*sigh* You had to go and make me check, didn't you? Ghost is in Episode 2, but not 3.
