It was pretty much the premise of the first half of the first season, and then quickly discarded. For good reason.
Now it's about power and desire, and the ability to maintain some semblance of virtue while being thrust into a world full of people who will exploit virtue as weakness. How does one maintain their sense of right and wrong in the midst of insanity? Bill, Eric, Sookie, and Tara have all been struggling with that concept for the first half of the season... and some of them are concluding that being a good person is just too much of a bother.

Or maybe I'm just too simpleminded to care about "what it's REALLY about."
I'm not trying to be mean but the one thing I like about HBO and Showtime shows is the fact that often they do make me think about things. Watching characters struggle adds a sense of realness and purpose to the show that I (and others) like. If you want mindless vampire entertainment then go watch Twilight, it is full of mindless entertainment. I would hope True Blood continues to raise questions in the midst of good acting otherwise if gets dumbed down for entertainment purposes then I will quit watching.
