I just could not get into the characters, like they hated each other and were full of loathing but they were forced to work together in the same work environment.
Furthermore and this was the teenage part of myself talking decades ago...the tech and the timeline did not make sense. There was no way Humans would have X after only recently discovering Warp and it would have an "equal" footing to other powers that be during such time. They would be out gun, or would have been stealing tech from other civilizations in order to play catch up.
Pretty much I did not feel wonder while watching Enterprise. Nor did I question the nature of the current social reality and if there was a better way of doing things, or sit back and take in a different culture and see there way of doing things was also internally consistent and in some ways legitimate. Pretty much it did not feel like Star Trek. Like I said earlier 9/11 changed everything with our culture in subtle ways.
