I view Scorsese's points on cinema as analogous to how wine lovers feel about wines. At one end of the spectrum there are mass market wines, produced in millions of cases per year and engineered via technology to appeal to the widest audience via little or no variation between bottles.
At the other end are wines from quality producers who seek better wines through better but labor intensive processes and limited production. They produce wines that vary from year to year and even from vineyard to vineyard within their properties. There was fear in the early 2000s that the prevalence of the former would drive out the latter. Fortunately that has not proved to be so, as enough consumers acquire better taste to keep the latter in business.
Hopefully, we will see something similar in cinema.
