Star Ocean: The Last Hope - The game is made by Square Enix and has a good story, fun combat, and a really good item creation system. You don't need to play any of the previous Star Ocean's. This game actually takes place before all the others. There are a few references, but it in no way detracts from the game.
Oblivion - An RPG, but also a first person game. Wide open world, you can play for hours and not bother with the main story. Once you get into the game (after the starting dungeon) it has a LOT to offer. Game of the Year edition should be around 20 bucks and includes the 2 expansions for it. Leveling up is not done through experience but through use of your skills.
Fallout 3 - The game is built using the Oblivion engine, but instead of being a swords-and-sorcery type, it is a gun-toting RPG set in world devastated by nuclear holocaust. Leveling is done through experience in this game though. Like Oblivion, you can play for hours with out doing the main story.
Fable 2 - An Action RPG that is fun to play, fairly humorous and can be played in short bursts.
Darksiders - A God of War type game where you play War, Horseman of the Apocalypse.
Bayonetta - Also a God of War type where you play a woman who uses guns and karate as well as spells to whip demon butt.
Dante's Inferno - You play Dante on a Mission to descend the 9 levels of Hell to get your woman back from the Big Bad Devil himself. Loosely based on first book of the Divine Comedy
Star Wars: The Force Unleashed - You play a recruit of Lord Vader's hunting down various Jedi/Imperial Scum. An action game with lots of interesting things you can do with Force Powers.
Lego Star Wars: The Complete Saga - Play through the six movies in Lego Style.
For some old school action you can pick up the next few from the Xbox Live Arcade
Castlevania: Symphony of the Night - Play as Alucard trying to kill his father
Bionic Commando ReArmed - Remake of the Nintendo Classic
Worms 2: Armageddon - You have a team of Worms killing other Worms with Bazookas, Grenades, Guns, and other explodey things.
