Yoshimo was not bad but, as you note, is only a temporary option. On the other hand, rolling up a straight and a dual/multi-class thief, maxing their stealth and making one a trap specialist while the other handles locks covers all thieving bases quite well. For that matter, if you are only taking a thief under duress, you can do the same thing with two F/Ts and have them both backstabbing with fighter THAC0. Once you have the multi-player party you want there is no reason at all not to just move the game file to the Save folder (or just overwrite completely with the MPSave folder) and go back to single player.

In the vast majority of cases, having half a thief was plenty in my experience. Admittedly, none at all is rather tricky, as Find Traps and Knock only go so far, but once you exchange Yoshimo for Imoen, her limited thieving skills are quite sufficient at least for my purposes. I would expect that even Nalia (as annoying as she is) or Haer'dalis would be sufficient for most purposes, so you can drop Yoshimo.

Depends on how many pockets and locks you want to pick, especially at low level. There are only so many skill points per level, and most go into HiS/MS. Having only one thief forces you to pick and choose whether you want to be useless at picking pockets or opening locks, especially since you also have to sink points into finding traps (although, in practice, finding most traps takes more time than actual skill; if you wait long enough in the area, you should find 80-90% of them with even 30% skill; the others, of course, will kill you dead.) Nalia is a good example; she picks pockets OK, but sucks at everything else, even stealth.
