Fable was fun for the first some hours (okay, some dozen hours, but I am an rpg fan at heart so any game that clocks in under 60 feels short to me ), but then it got kinda boring and repetitive. Same for 2. I never did play the third one, but from everything I've heard, it's as unrelated to the previous two as the second was from the first. So you won't be missing out on anything by playing just 1 and 3.
That said, they are fun games for a while. You get to play as good or evil, the combat is fairly fun, and in general it's fairly entertaining. But it's the sort of game where I invariably play the good guy, and then eventually find myself slaughter guard after guard after guard because I've gotten so bored with the ordinary gameplay.
