The console command is limitless whether you use it or not. It's already in the game. You have nothing more than your self control to stop you using it, and the same is true if you use it to add capacity (your self control is all that stops you from adding unlimited capacity). As for realism and historicity, let's not go there. Your character could never realistically carry all the crap that he does in the game. If you're suspending disbelief or rationalizing by saying that he has a magic bag or something along those lines, just extend it a bit further. Your magic bag can carry twice as much as before. There's no reason that you have to add a donkey to make it "believable."
Anyway, if you prefer not to use the console, I have no problem with that, and I'm not trying to say that you're "wrong." I'm just not convinced that your reasoning makes sense, that's all. Seems more like a personal neurosis than a rational preference.

I'm so sad that spell damage doesn't scale in Skyrim

This is your answer, as far as I can tell. Dragonbone is on top of the Light Armor branch. *NM*

True, there are those perks. But they apply to all fire spells, or all dual-cast spells, etc

Can you enchant Light Armor to make it as effective as no-armor mage robes? *NM*

I can usually get three or four fireballs off

Fireball splash damage doesn't hurt you. Walk up to a wall and blast it; no damage. *NM*

True enough. Can't you tell them to hold their ground, though? I've never used one so I dunno. *NM*

I wish the fireball explosions did knockback, ie sent enemies flying, that would be so much cooler *NM*

I think companions are a clever ruse by Bethesda

Lydia has been parked in my house ever since I got her. I prefer going solo in both NV and Skyrim. *NM*

Why not just use the console to add carrying capacity to yourself?

Surprisingly, console commands seem like "cheating" while mods with "features" don't.

It's compensating for game design that doesn't agree with you. Not cheating, as far as I'm concerned *NM*
