In a cave a little way north of Whiterun... It was probably the toughest enemy I've faced so far, especially with the Falmer there. I'm level 15, but I don't feel powerful at all! But the Centurion was impressive, and totally different from Morrowind. I liked it, and the feeling of achievement I got when I finally defeated the two of them, and the fact that I had to use some tactics to achieve that goal.
More generally... Just the world. Normally I don't particularly care about graphics being the latest and graphics, and some of my favorite games are still from the PS1 era... But this game is beautiful, and that works really well for drawing me into the world.
I've only killed one dragon aside from the first scripted one, but both battles were amazing. The second one particularly, since it happened while I was climbing the steps to High Hrothgar, and happened to spot a dragon circling the village below me. After many attempts, I managed to get it's attention, and then even defeat it, though it was far from easy, and required my best magic scrolls. My own magic, and archery, and axe, are all sadly still too weak to truly challenge them.

This. The dungeons are great compared to the abysmal monotony of Oblivion. *NM*

Do you all recommend doing the main quest straightaway? A bit at a time?

That IS always fun, especially if you don't expect to one-shot that particular adversary. *NM*
