Here are my goals, quite tame compared to yours!

Beat Fallout: New Vegas! And whatever expansions I get my hands on, which at the moment are 3. This is my first Fallout game ever, lol, and I'm liking it a lot!
And then, as if I haven't gotten sick of Bethesda gameplay yet, it's on to Skyrim, never to return.... Or so people on this board seem to tell me with their comments regarding it. Frankly, I'm dubious it can provide more than the ridiculous 394 hours of gameplay I've put into Morrowind during a single playthrough of the GOTY version. But still, I have high hopes for it.
I can't comment too much on your goals, since I've never played WoW, Planescape, and only played the first Assassin's Creed (and found it fun yet more than a little repetitive after a while). However, I urge you to play Skyrim and ME2! The Skyrim endorsement should be obvious, since I'm getting that as well, but ME2 is a really fun and cool game. As others have said, ME2 is a lot more streamlined than the first game. This is good in terms of the combat of the game (although it does make it seriously challenging in some spots), but there are very few ways to manage your character's inventory and such standard RPG elements. Also the game flow is really broken up with Mission Complete screens and crap like that... But it's good overall.
But yeah, as beetnemesis said, those are ambitious goals! Good luck accomplishing half of them before Christmas.

uhm, the main plotline was super repeatitive and unengaging except for the beginning and end.

Oblivion is only really playable so you know what's up later. It's not very good.
