If you could create just one game that otherwise you don't think will ever exist, what would it be? What sort of game do you really want to exist? The sort of game no one will ever make properly, but if they ever did you'd buy it in a heartbeat. The sort of game you would make if you had the resources and complete control.
For me, that game would be an Elder Scrolls style game set in Westeros, the world of A Song of Ice and Fire and the Game of Thrones tv show (though I would model it after the books, not the show). I would set it right before the start of the first book. Perhaps the main character could be sent on a mission by Jon Arryn, shortly before he dies, to discover all of the king's bastards throughout the realm and make sure they're safe, while trying to uncover traitors conspiring against the king and of course doing a crapload of side quests and exploration.
Mostly I want this because the idea of exploring a fully realized Westeros in the grand Elder Scrolls style makes me drool onto my shirt a little. The world would of course be compressed to a certain degree, so that you could walk between towns in a handful of minutes instead of a handful of days. I would include all the towns listed on the map, all the roads and geographical features, and sprinkle in ruins and dungeons and caves and such. The history of the world would be accessible via books, just like an Elder Scrolls game.
It'll never be made though, unless by some miracle Bethesda decides to pursue such a license. I've thought about trying to use the Elder Scrolls toolset to craft such a world, but it would be the work of a lifetime for one person with minimal skill to do it right, and I don't have a lifetime to spare. A man can only dream.
