The GC and N64 saw decent 3rd part support, although the vast majority of it wasn't rated M.
Eternal Darkness, Resident Evil 4, Tales of Symphonia, Skies of Arcadia, F-Zero GX (Sega developed), Super Monkey Ball, Prince of Persia, Soul Calibur 2, Viewtiful joe, Rogue Sqaudron, Resident Evil 1 remake, Timesplitters 2, Beyond Good and Evil, Ikaruga, MGS: Twin Snakes.
Those are all fantastic 3rd party GC titles I named off the top of my head.
The Wii has a similar list of good 3rd party titles, they just tend to be niche and with lower budgets than your typical AAA, so they're easy to overlook - especially if you put ridiculous artificial constraints on your tastes, like requiring them to be rated M.
My point here is not to defend Nintendo blindly - it's been a pretty clear trend that Nintendo hardware is for Nintendo games, first and foremost, since the N64 - but to summarily discount even the possibility of good 3rd party games is the height of willful ignorance.
