Showing your anger isn't necessarily bad if you can do it without really losing your temper...

If you're going to get over this as a couple, your anger and hurt at the things she did are one of the things that'll have to be dealt with, obviously, and so it's not like you should try to hide that from her.
About the pressure thing, that's one of the things counseling is good for, I'd imagine - even aside from the counselor's actual skills, it creates a fixed time at which she has to face her issues and can't just run away from them. You can do that on your own too, I suppose, but it's harder if she's evasive, because you can't really make her continue when she wants to stop, and if you keep trying to start it up again, she'll probably just keep evading it.
I have no idea what a wall unit organizer is, so don't know if that's worth spending money on. But Sareitha is right about the rent, if she wants you to pay her lodgings, well, there's your joint place, if she insists on going off to live on her own, she can pay for it herself.

I think the counseling will help, assuming it's with somebody good

The best thing you can do is to speak to her when your anger isn't flaring, but be honest.

Make sure you keep records of the money you give her and the clothes you buy.
