Stress to her that you like her a lot, and that your guys' relationship is still very important to you, but that you just need time before you're going to feel like saying it is right.

If all else fails....just blame your ex-wife. I'm sure you can come up with a good tale that explains how she has ruined your "I love you" saying ability for a while. :P
