I prefer the way my Macbook organizes its files, as it's simpler to locate and to label folders with Snow Leopard than it's been for Vista or 7.
Got a very good processor and graphic cards for what I paid (I received an educational discount). Very stable, moreso than my Lenovo desktop has been.
The screen is great, plus the battery life is good.
Looks nice, but that's a minor part of the equation.
Oh, and I had some Mac software from when I worked in public schools, so it was nice to use those as well. Guess I should note that I have Parallels 5.0, so I have access to my PC software as well.
But it really comes down to preferring the Mac layout to the PC one. Same might hold true for several teacher-types as well. Oh, and paying $200-300 more than a comparable PC was worth it considering the software costs (iWorks 09 being half the cost of Office 2007 and contained more features, for example) balanced it out in the end.
