No, indeed, I don't say America "ruined" it - just changed it. It's not necessarily better or worse - the mass-produced supermarket versions are probably worse, but in restaurants it's something else.

I think it's just the same point as with the Chinese food as we know it in the West - that actually this is really not the stuff the people in those areas eat on a daily basis, or only the wealthy ones. In here most people would know TexMex food as simply "Mexican" - restaurants will bill themselves as Mexican and not say anything about Texas (sorry
). So yeah, it's a fair point to remind folks that actually most Mexicans eat different things.
