Well, whatever the reasoning, this Belgian did think the gumbo was pretty damn tasty, and looks forward to eating more cajun food. We were not able to determine precisely how long it had taken to prepare it, so I couldn't say whether they had really respected the three hours minimum requirement for preparing it... but however long it took, I recommend it.
