Gumbo does have options but okra and a good rue are not among them. I lived in Chicago for a while and my friends mom heard I was from Texas and wanted me to try her chili. It was some of the best hamburger soup I had ever had but it really wasn't that close to chili. She thought to much chili powder made it harsh and added vegetables to make is more healthy and I am not sure she had ever even heard of cumin.
Besides I am pretty quick with prep work and I can nock out a decent traditional gumbo is three hours. It is all about getting the rue right.
