If there was nothing else to eat, and it was insects or starvation, I suppose I can't predict what I'd be willing to do. But if it was only an alternative choice, then no, I would not personally choose to eat them. I mean, come on. I can barely stomach Chinese food. Insects are a step too far.
But objectively speaking, I can definitely see the value of it. I don't know exactly what the resource use per calorie would be for raising food insects compared to raising cattle, but I have to imagine it's a more efficient ratio.
But for me, there's too much of an ick factor. I am not an adventurous eater. I am the complete opposite of an adventurous eater. I would not eat a chocolate covered ant. I would not eat a mealworm sausage. I would not eat a grasshopper pie. But I accept that I'm an outlier when it comes to food. I don't even like normal meat pies. I don't enjoy plenty of perfectly normal things. Some of that is psychological, and some of it is an actual aversion to the taste, because I have sensitive tastebuds. So if I have a choice, I won't eat an insect.
