Try average "liberty" fries with any north american commercial brand of mayo (Canadian, American - it doesn't matter they're all as horrible), and you'd change your mind! And with the size of portions of fries American eat, it'd be a serious health hazard.
It can't be as much of a health hazard as poutine. Much as I enjoyed that when I ate it.
The mix of fries and mayo would have sounded plain revolting around here until 15-20 years ago, btw. It's become very popular in Montréal only since many joints make Belgian-style fries with homemade mayo.
See? Once you taste the real stuff, you realize how good it is.
Merely remined that "good fries" and North America aren't a natural match.
Poutine is best forgotten! Since you've been here, it has spread to the rest of the country, and it is spreading to the US now. One day, we'll be accused of genocide. The last one I've eaten was like 15 years ago, and I don't miss it.
As for learning to make good fries from Belgian immigrants, we certainly won't complain! Foodwise, there's certainly nothing to complain about with the wave of immigration from France and Belgium we got in the last ten years (in Montréal, it's more like an invasion! A lot are from the food industry, bakers, butchers, cheese makers etc. as it's become so hard to establish yourself in France in those trades apparently)
