Actually, it seems like deleting the entire library and then adding the "Music" folder restored it.

Essentially, to make sure I wasn't missing anything I did this:
1. Add "Music" to Library
2. Make sure everything was duplicated
3. Note discrepancies
4. Delete Library (but KEEP FILES)
5. Add "Music" to Library
6. Hit "Get Album Artwork" for Artwork that iTunes gave me (as opposed to me manually adding - that was restored with the files)
