And it really, really needs to be made in Britain. Or NZ, actually. My home town has a great cheese factory, and they make the best extra extra mature cheese I've ever eaten. It has little bits of calcification in it, so it's a little crunchy, and the flavour is incredible. I could eat a lot of that. We call extra mature cheddar "Tasty Cheese" in NZ, so this one is called Totara Tasty. YUM.
