Schleck caught up midway through the stage, long before Cancellara held the peloton out of a bunch sprint in protest to the number of crashes that had occured earlier on. Any crashes that occur early in a flat stage are always recoverable, but ones at the start of a long climb late in a stage are not. But yes, luck plays the biggest part. If Schleck had fallen just before a climb Armstrong and co would have done the same thing to him or any other potential GC threat.
Cancellara got the bunch to slow down when Schleck fell, to allow him and the other fallen riders to catch up. That is a seperate even from what went on with the (non)sprint at the end of the stage. It is all pretty standard when someone contending for a high finish falls on a flat stage, unless it is in the last few kilometres but you seem to miss it out in your account.
With regards to Armstrong, I remembered since about the time Ullrich waited for him after he fell on a climb. Armstrong thanked him by sprinting up past him before the slower accelerating Ullrich had a chance to get back up to full speed and adjust back to racing.
