People are moving back to making their own foods, by which I mean making their own breads, their own sauces, etc. and away from conveniences in a can. Of course, it takes more time and effort, but I think the result is noticeable. Also, if cooking is viewed more as an art and a fun experience, rather than a means to an end (of stuffing one's stomach), then the time is well-spent.
Of course, I still support cooking food and find the raw movement to be an odd outlier that I think will probably not catch on in any meaningful way. The same goes with vegan eating.
I don't even support vegetarian eating per se; I like my meat and see nothing wrong with it, but I DO think that eating meat should be done responsibly. This means that you recognize that something was killed for your nutrition, so you avoid throwing meat away. If that means buying less or going to the store every day, so be it. I also think that responsible meat-eating means eating grass-fed cattle, free-range chickens and other "natural" meats, as well as humane and hygienic slaughter techniques. This means that we treat the animals with a modicum of decency - animal cruelty is reprehensible.
I think that in the future, society will move to this standard, but I don't think we'll ever see vegetarianism as a predominant way of life because even in societies where it has been encouraged strongly for religious and health reasons for centuries, it doesn't predominate.
