Does it need to be something hearty main dishish, or can it be a side dish type thing?

If it's a main dish, I'd go with a simple pasta dish. It's tasty and easy to prepare. Plus you could do a pesto pasta, which is actually quite nice cold as well as hot, so you could solve the transportation problem that way.
If it can be a side dish...make something like Bruschetta or Spring Rolls. They're both pretty easy to make and very very tasty.
Sorry, no recipes...I'm at work and kinda lazy.
