Just in terms of planned books.
His Stormlight Archive is planned to be, what, nine books? Something like that.
Then TWO more Mistborn trilogies.
I know he wanted a second Warbreaker book, and he's mentioned wanting to do an Elantris sequel as well.
Plus Wheel of Time, plus the inevitable random books I'm sure he'll pepper in from time to time.

STORMLIGHT is ten, plus as you say there are WARBREAKER and ELANTRIS sequels planned. There's also a further series, called DRAGONSTEEL, planned which is apparently going to be five to seven books in length. There is also going to be a 'unifying' book or series called HOID which will fill in the gaps and reveal what is really going on overall.
