I have a feeling that if I do, I probably will still end up skipping 7-10 (or whichever the ones are that I don't like).

At least, that was my experience last time I reread a few books (PoD through KoD or so, I think, not a full reread). Not that they are particularly great, but if you reread you have on the one hand the advantage of not having overblown expectations of what will happen in any given book (indeed, more likely you'll have the opposite and be pleasantly surprised), and on the other hand you have the advantage of remembering better who all those random secondary characters are again, and where they fit in.
