The 17th century El burlador de Sevilla y convidado de piedra by Tirso de Molina (which I don't own) and the 19th century Don Juan Tenorio by José Zorrilla.
I have the other versions already mentioned; am curious to see if the legend changed as much over four centuries as Roland/Orlando did over seven.
