His books all tend to be twists on epic fantasy tropes. His various magic systems are very imaginative, with some neat twists.
Plus, most of his books are pretty self contained. The longest series he's written so far is a trilogy (plus a side-novel in that same universe, but whatever). So there isn't a giant backlog to get through, like with, say, Wheel of Time.
Mistborn- What if The Evil Lord Sauron won? Cool, physics based magic system, with constrained and immediate effects.
Elantris- What is there was a City of Paradise and Wonder, that suddenly suffered some hideous disaster, and all of its members became undying zombies in constant torment? What if anyone could one day wake up AS one of them?
Warbreaker- What if our pantheon of Gods actually lived amongst us, in a big castle? And some of them were really sarcastic?
Way of Kings- Hm... it's harder to codify this one. It's definitely the "highest" of his High Fantasy books, but it's still awesome. Lots of cool stuff, with hints of more to come.
I personally recommend starting with the Mistborn trilogy- it's my favorite, and really good. If not, then I suggest Warbreaker.
