Why so certain about Bredon? I didn't see any hint that he was an Amyr, other than the rumor about him engaging in some "pagan ritual" outside of town.
The pagan rituals was one thing. His thing with the game and his strategy was another. Also Denna told Kvothe that her patron was doing things at the Maer's place and that Kvothe might have already met him. Plus, Kvothe is telling the story in a tight manner, skipping things that aren't important to the overall conclusion. He skipped learning a language in a day to defend himself in court. He skipped the shipwreck and the pirates, because they had nothing to do with the overall story he's telling. But he included quite a lot of Bredon.
