There's a ton of development, both character and plot. The books continually build on themselves, so some of the stuff mentioned in the first book (both backstory and the actual events of the book) is still relevant in later books.
I think it's generally agreed that while Storm Front and its sequel, Fool Moon, are good, the series really picks up at the third book, when things get a bit darker and more complicated. From then on, it's basically just a long curve upwards, with each book becoming more and more awesome.
Oh, and I enjoyed RJ's Conan books as well, so have fun with that. But definitely give Dresden a few more looks!
