My intro to fantasy came from the Earthsea books, so I always recommend them as a jumping off point. They are short too, which is less of a time commitment if she is just starting.
Sci-fi is harder for me to recommend. I was raised on the classic sci-fi, Heinlein especially...and he's really not for everyone. Maybe Bradbury? On the one hand it's not really treading lightly, but it is really good science fiction.
