I saw this in the bookshop and was tempted but I thought it's either going to be fantastic or really bad.

Very timely post.
I thought it was lightweight, but completely hilarious. Basically you have an abridged version of P&P with zombies and references to Shaolin monasteries and ninjas at key moments. For instance, the ball at Netherfield hall is interrupted by zombies, who devour a few of the guests before being killed off. A couple of the secondary characters also have their stories slightly tweaked to make them more zombie-friendly. But most of the book is either directly lifted off or a summary of the original.
I'd say you should have read P&P first, and then appreciate P&P&Z as the parody it is. But if you don't like the Austen comedy of manners-type story to start with, this is not necessarily going to be so much better.
