It's a little more complicated than what you describe. Swearing one Oath on the binder halves your lifespan but doesn't mark you with the ageless look. It takes more than one oath to do that. Certainly three, maybe only two. It was Sammael who put us onto that (LOC Threads Woven of Shadow). And it was to mark repeat criminals, not first offenders.
I've not got strong views one way or the other as to the actual mechanism at the cellular (or whatever) level.
I also agree that channelling the One Power seems to repair aging damage - Sharina looking younger is a case in point - rather than just preventing cells from becoming damaged. It can't undo the menopause however - that would be 'unnatural' I guess.
