They attacked the White Tower itself. While probably still made by Ogier and Aes Sedai, blasting through windows and walls with fire. Also, the Aes Sedai were trying to keep the blocks intact. The sul'dam hardly cared.

It's easier to blast than to disassemble.The Aes Sedai will want to put a chain back in later.

IIRC The White Tower was built to be impregnable against conventional weapons and weather.
