The d20 Wheel of Time game tried to address it, but the fact stands that channelers can do many, many, many things, without much effort.
So, if a woman channeled Lan's hands together? Only a very weak channeler would be unable to hold him. We know there are physical limits- for instance, Elayne gets goggled at by a novice in tFoH when she uses a flow of air to levitate a large pile of wet laundry- but generally, the limits are above what a normal human can break through.
I think a better way of doing it might be something like Ars Magica, and only focus on the channelers. You CAN make non casters, but they're not as powerful as a caster, and that's that.
