It's just a simple fact that Jordan's world is not very well thought through. The languages were only one point. There are many other (the Aes Sedai idiocy, as Cannoli so convincingly pointed out). It's funny that you chose to compare Jordan to Martin, because George Martin is in the process of shitting the bed himself. His HBO series has moved beyond the books and his pace is glacial at this point. I used to joke that he'd pull a Robert Jordan and die before the series is finished; now I seriously believe it to be the more likely outcome. Martin added in too many side plots (most of which HBO rightfully dispensed with entirely) and in some cases, side plots that are just stupid (the fake Aegon or whatever that idiot's name is). He's spending entire books trying to move people to where they need to be, rather than just doing what most good writers do and leaving out all that needless exposition. And his languages sucked until HBO got some real linguists involved to make them realistic. These guys all seem obsessed with the grapheme "ae" - Aes Sedai, valar dohaeris, blaeh blaeh blaeh...it's almost become the standard placeholder for "I don't know shit about languages but hey, this looks neat". Your piss-poor analysis of languages is just that; piss-poor. Come back when you actually know about 5 and let's discuss how realistic Jordan's world is - I'm not going to argue with "I am wikipedia, and you can too!"

Worse, though, is false anachronistic language because the author thinks it sounds "old timey". Martin is even worse about this than Jordan was, and he is so inconsistent about it's use he reminds me of the MST3K parody watching of "Alien from LA" where the actor keeps forgetting his Australian accent from time to time. When he regains it, they say, "I'm back, and I'm more Australian than ever!" That's my assessment of Martin's anachronistic writing style.

However, the reason I was mentioning this is because Jordan's world is just so poorly thought through. Martin has some flaws, but he looks like Tolkien compared to Jordan.

As for the lack of churches because the Creator doesn't care, how is that in any way different from, oh, I don't know, THE REAL FUCKING WORLD? People are defined by faith and belief in something bigger and it's a universal human characteristic. Sure, maybe in Jordan's world people are completely different, but it makes it hard to relate to his world when his people lack fundamental qualities that are universal to the human experience.

So yes, you can be wrong, and you are.
